1 ½ cups rolled oats


½ cup vanilla or chocolate protein powder


¼ cup finely ground coffee or instant espresso powder


½ cup almond butter (or peanut butter)


¼ cup honey or maple syrup


¼ cup milk (almond, oat, or regular)


1 teaspoon vanilla extract


½ teaspoon cinnamon (optional)


¼ teaspoon salt


¼ cup dark chocolate chips (optional)


Instructions:


1. Prepare the dry mix: In a large bowl, combine rolled oats, protein powder, ground coffee, cinnamon, and salt. Mix well.



2. Melt and mix: In a small saucepan over low heat, warm the almond butter and honey until smooth. Remove from heat and stir in vanilla extract and milk.



3. Combine: Pour the wet mixture over the dry ingredients and mix thoroughly. If the mixture is too dry, add a splash of milk until it sticks together.



4. Add extras: Fold in dark chocolate chips if using.



5. Shape the bars: Press the mixture firmly into a parchment-lined 8x8-inch pan. Flatten the surface with a spatula.



6. Chill and set: Refrigerate for at least 1 hour before slicing into bars.



7. Store: Keep in an airtight container in the fridge for up to a week or freeze for longer storage.
